Roasted Delicata Squash
I love all squash but delicata is probably my favorite because you don't need to peel them and the skin tastes great. Makes this so easy to put together.
Servings: 4 people
Ingredients
- 3 delicata squash halved lengthwise, seeds removed, cut into 1/2 inch pieces
- 1 tbsp olive oil
- sea salt
Instructions
- Preheat the oven to 400°F.
- Toss squash with olive oil and sea salt and arrange on a single layer. Roast until squash is golden turning halfway through, about 25-30 minutes.
