Cotija cheese,

Instructions
Heat olive oil in a large saute pan and cook onion for 7-10 minutes, until it starts to brown. Add garlic and cook additional 60 seconds.
Add diced zucchinis, tomatoes, corn, jalapeno, salt, pepper, and oregano. Stir and saute until zucchini is tender, 7-8 minutes.
Taste and adjust seasoning.
Serve with Cotija and cilantro, if desired.
