Calabacitas

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 zucchinis, ¼-inch dice
  • 2 cups corn kernels
  • ½ jalapeno, minced
  • 3 plum tomatoes
  • 1 tsp oregano, ideally mexican oregano
  • ¾ tsp salt
  • pepper
  • Cotija cheese, optional
  • cilantro, optional

Instructions

  • Heat olive oil in a large saute pan and cook onion for 7-10 minutes, until it starts to brown. Add garlic and cook additional 60 seconds.
  • Add diced zucchinis, tomatoes, corn, jalapeno, salt, pepper, and oregano. Stir and saute until zucchini is tender, 7-8 minutes.
  • Taste and adjust seasoning.
  • Serve with Cotija and cilantro, if desired.
