Calabacitas
Ingredients
- 1 tbsp olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 zucchinis, ¼-inch dice
- 2 cups corn kernels
- ½ jalapeno, minced
- 3 plum tomatoes
- 1 tsp oregano, ideally mexican oregano
- ¾ tsp salt
- pepper
- Cotija cheese, optional
- cilantro, optional
Instructions
- Heat olive oil in a large saute pan and cook onion for 7-10 minutes, until it starts to brown. Add garlic and cook additional 60 seconds.
- Add diced zucchinis, tomatoes, corn, jalapeno, salt, pepper, and oregano. Stir and saute until zucchini is tender, 7-8 minutes.
- Taste and adjust seasoning.
- Serve with Cotija and cilantro, if desired.
