Preheat oven to 400℉
Cut potatoes into wedges.
In medium baking dish, combine lemon juice, garlic, oregano, chicken stock, salt, pepper, 2 tbsp olive oil and potatoes and mix.
Roast for 1 hour to 1.5 hours until fork inserts easily, stirring halfway through.
Change oven to broil. Drizzle with remaining 2 tbsp of olive oil and broil 5-7 minutes until brown and crispy.
Serve with remaining sauce spooned on top and sprinkled with fresh dill.
