Greek Lemon Roasted Potatoes

Ingredients

  • 3 potatoes (medium sized)
  • 2 lemons, juiced
  • 3 cloves garlic, minced
  • 1 tbsp fresh oregano, minced
  • 1 cup chicken stock
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp olive oil, divided
  • fresh dill

Instructions

  • Preheat oven to 400℉
  • Cut potatoes into wedges.
  • In medium baking dish, combine lemon juice, garlic, oregano, chicken stock, salt, pepper, 2 tbsp olive oil and potatoes and mix.
  • Roast for 1 hour to 1.5 hours until fork inserts easily, stirring halfway through.
  • Change oven to broil. Drizzle with remaining 2 tbsp of olive oil and broil 5-7 minutes until brown and crispy.
  • Serve with remaining sauce spooned on top and sprinkled with fresh dill.
