Greek Lemon Roasted Potatoes
Ingredients
- 3 potatoes (medium sized)
- 2 lemons, juiced
- 3 cloves garlic, minced
- 1 tbsp fresh oregano, minced
- 1 cup chicken stock
- 1 tsp salt
- 1/2 tsp pepper
- 4 tbsp olive oil, divided
- fresh dill
Instructions
- Preheat oven to 400℉
- Cut potatoes into wedges.
- In medium baking dish, combine lemon juice, garlic, oregano, chicken stock, salt, pepper, 2 tbsp olive oil and potatoes and mix.
- Roast for 1 hour to 1.5 hours until fork inserts easily, stirring halfway through.
- Change oven to broil. Drizzle with remaining 2 tbsp of olive oil and broil 5-7 minutes until brown and crispy.
- Serve with remaining sauce spooned on top and sprinkled with fresh dill.
