Oven Roasted Collard Greens

Deep, earthy flavor and very easy to make.

Ingredients

  • 2 bunches collard greens, washed and chopped
  • 1/2 package bacon, sliced
  • 1 medium onion, chopped
  • 1/4 cup chicken stock

Instructions

  • Preheat oven to 300°.
  • In enameled caste iron dutch oven, saute bacon until crisp, remove from pot.
  • Saute onions until soft, about 5-6 minutes.
  • Add collard greens and saute until wilted.
  • Add chicken stock and bacon and stir.
  • Cover with lid, slide into oven for 1 hour. Salt if necessary.
