Oven Roasted Collard Greens

- 2 bunches collard greens, washed and chopped
- 1/2 package bacon, sliced
- 1 medium onion, chopped
- 1/4 cup chicken stock
Preheat oven to 300°.
In enameled caste iron dutch oven, saute bacon until crisp, remove from pot.
Saute onions until soft, about 5-6 minutes.
Add collard greens and saute until wilted.
Add chicken stock and bacon and stir.
Cover with lid, slide into oven for 1 hour. Salt if necessary.
